Simple Biscuit Recipe

I often tell people I’m not much of a chef. I am fully capable of cooking and have made many meals for my family over the past two decades. The truth is that I really don’t enjoy cooking and I’m at peace with that. Maybe I’ve spent too much time preparing meals for people who then tell me it’s not what they are in the mood to eat or it’s something they just don’t like. Talk to any mom and you’ll probably hear a story (or two) about how they are done with the feeding of the humans–who apparently need to eat multiple times a day, WTH?

I do, however, love baking. I find it quite soul filling and very therapeutic. Usually people are happy to eat sweet baked goods so it’s a way for me to connect with others, inside my home or outside. I’ve made some complicated recipes and not so complicated ones over the years but there is always one request–these simple biscuits. Time and time again, my family would tell you this is the absolute favorite thing I make in the kitchen. And it’s so simple, which is right up my alley.

Yesterday, after we came home from strawberry picking, my daughter said, “Mom, are you going to make the strawberry biscuit things?” and I told her I definitely would. This recipe was handed down from my mother so every time I make these little nuggets of happiness, it’s like I’m transported back to my own childhood. Life was so carefree back then. No to-do lists, no mortgage to pay, oh the ease of being a kid. Hopefully when my two girls make them for their families someday, they will have fond memories of their own childhood. It’s wishful thinking.

I whipped up a batch this afternoon and I am pretty sure it takes all of 5 minutes from start to putting in the oven. The ingredients are things you already have on hand and you can use these biscuits for just about anything. In fact, my husband said today, “These would be perfect for literally anything.” So, here you go. I wanted to share a favorite and SIMPLE recipe from my own kitchen. I hope you love it as much as we do.

We like to eat these with freshly chopped strawberries sprinkled with sugar and let to break down a bit so the juices start to come out. Or sometimes we just make a batch and eat them with butter and a drizzle of honey. I’m pretty sure I’ve used these for biscuits and gravy before, too. You can’t go wrong.

Simple Biscuit Recipe

Yields about 7 biscuits

  • 2 cups flour
  • 2 TBSP sugar
  • 3 tsp baking powder
  • 1 tsp salt
  • 6 TBSP butter
  • 3/4 cup milk (add more if you need)

Preheat the oven to 450℉

Mix flour, sugar, baking powder and salt together.

Use a pastry blender to cut in the butter.

Finally, stir in milk to make a soft dough. The dough will be a bit flaky, not sticky.

Put the entire dough on a floured surface at an inch thickness.

Use a round cutter (or a cup) to cut out the biscuits and place in a round cake pan (I’ve made these on a baking sheet, too, but typically I use a 9” round pan.)

Bake for 12-15 minutes.
